Becoming Dad cooks......Irish Stew

On what looks to have been one of the warmest days of the year, I decided to make my first pot of stew of the year. To get ready for the Autumn/Winter months to come.

Onions, Beef, carrots and seasoning.

Has to have spuds......

Good big knob off butter......

Starting to thicken with the help of some cornflour. Slowly simmered for a few hours.

The finished result with some Wheaten bread. Have to say it tasted rather good. Best stew I've made yet and definitely a warming meal for the cooler months ahead of us. Keep an eye out for my next meal......

Becoming Dad......Day trip to Portrush

I have been so excited about this day.

When I was a young boy, my family always went up to Portrush for our holidays and I loved it. The wonderful beaches, the amusement arcades, such as Phil's and Barry's and going to Grahams Toyshop and Ice Parlour, to enjoy some amazing icecream mountain while watching Tom & Jerry or some other Warner animation, they always had showing. They are some of the best memories I have and cherish they greatly. I wanted Finley to start of his great memories of this, ofcourse, this year he's too young to remember but I have the photos and the memories to tell him.

As normal now, we were up early and got into the car. We played the game "First to see the sea", spotted the awesome caravans/beach homes which are now built at Kelly's caravan park. The world famous Portrush Golf Links and parked up in the main carpark.

The sun was out but not too hot as to annoy the wee man, we had a great walk along the coast and through the shops, amusements and into "The White House" at the top of the street.

Sadly, as we already knew, Graham's is no longer there, with their amazing toys and scrumpy ice-creams but the amusements are......

Although, there was no Graham's ice-cream, Morellis had these beauties.

Finley stepped on sand for the first time, another memory! We walkwd down by the water and there were many families on the beach and even in the sea (which  I was amazed by because that water is cold!)

Finley on the beach, wearing his amazing sun hat. Daddy with his radical new haircut.

Then we hit Barry's, what a fun place to go! So many happy, smiling faces. It was wunderful. Zoe managed to win Finley a "Barry" Bear and even had enough tickets left over to give to a other family to help them get a 'memory' of their day out.

Unfortunately, Finley was too short to enjoy many of the rides on his first trip to Barry's.

By the time we left Portrush, Finn was done in. His first of many trips to Portrush was complete. Now to find another date to go back up and to show him more of this wonderful town.

I hope the local council there continue to keep Portrush growing, helps to get the closed B&Bs and shops open again. The beaches are wonderful and the scenery is some of the most amazing anyone will ever get to see. The next time I'm up, I'll take more photos to show you all. If anyone has any that they would like to share, please do.

Becoming Dad has a beer......

......Robinson's Old Tom Strong Ale.

Dark red/brown, almost Ruby in colour with a good foam head. Smells of Dark Fruits and roasted coffee. Loads of rum smell also.

Tastes of caramel, dark fruit (plums), molasses, malt, and a vinous quality. A pretty solid flavour, with a nice amount of complexity. There's a slight booziness, but it's pretty well masked. A good rich flavour.

It's an ale to relax with, roll it around the glass to continue the aroma.

I wonder which beer will be next but this one definitely gets the thumbs up from me......

Becoming Dad Bakes......Lemon Drizzle Cake

It's effortlessly simple and absolutely ancient. This was Zoe's choice for her birthday cake this year.

You start with a basic sponge recipe and then drizzle it in lemon heaven.

Cake:
3 large eggs
Self raising flour 6oz (170g)
Caster Sugar 6oz (170g)
Unsalted Butter (room temp) 6oz (170g)
Zest of two Lemons

Drizzle:
Juice of two Lemons (the ones you zested)
Powdered Sugar 4oz (110g)

Grease a bread tin (about 24x10.4) and pre-heat your oven to 180C/350F

Cream together your cake ingredients until you're left with a nice smooth cake batter.

Pour into your tin and bake for about 30-35 mins.

While you're waiting, mix together your icing sugar and lemon juice until totally smooth, pop it to one side. After 30 mins check the cake by inserting a cake skewer into the middle, if it comes out clean it's done.

If not, give it a few mins more. When it's ready, use your skewer to poke holes all over the cake, all the way down to the bottom. Pour over the lemon glaze and leave to cool.

Remove from it's tin and slice into manageable chunks.

Then have with a mug of coffee......

The day Daddy left the keys in the car......

Day off from work and after tidying around the house this morning. We packed the car to go to the new Home Bargains store at Banbridge Shopping Outlet.

After getting Finley into his pram, we had a leisurely walk around the new store and I have to say it's pretty good. We picked up many a thing and we're for walking over to Tesco's when I said that I would put what we shopped into the car......

......Shock horror!! Can't find the car keys!! Did I drop them? Had I been pick-pocketed? Nah, jeans are too tight. Then I thought, Did I take the keys out off the door when locking up? I went into Tesco's and before I had finished asking if anyone had handed in keys, I saw them on the shelf.

The guys there were brilliant, one said that they would need four items of ID but took the sheer panic on my face as all they needed to make sure the keys were mine!

To the Good Samarite who handed the keys in. Thank you so very much! That was your good deed for the day done.

So......to get my heart rate down a little, we popped to Costa Coffee. I am currently having one of their new Popcorn flavoured Cappucino's, Zoe is having Mint Cooler and Finn is having milk! Any excuse, I know! 😊
